Easy Oat Pancakes

Why not try these pancakes for something different – the kids will love them and they are full of protein to keep you full.

Berries are rich in antioxidants and help detox your system, they are packed with Vitamin C which helps your body deal with stress and they are full of fibre which helps regulate blood sugar levels.

Ingredients

Coconut oil

50g rolled oats

100g fat free cottage cheese

2 eggs

1/2 tsp cinnamon

Greek Yoghurt to serve

Blueberries to top

 

Method

 

  1. Blend the ingredients in a food processer
  2. Add a little oil and heat, then pour a ladleful into the pan
  3. Cook for 2-3 minutes on each side.
  4. Serve with blueberries and a dessertspoon of Greek yoghurt
